Chestnut Mashed Potatoes

  • 2 lbs. red potatoes, peeled and chopped
  • Chicken broth
  • 2 springs parsley, chopped
  • 1/4 cup chestnuts, minced
  • Pat of butter
  • Pepper and salt

Preparation

Step 1

Heat oven to 375°F.

Take a heavy roasting pan, spread chopped potatoes across the pan. Sprinkle with parsley and chestnuts. Season with pepper and salt.

Add chicken broth and pat of butter. Roast in oven for 25-30 minutes or until tender.
