Chicken - Grilled Margarita Chicken Salad

Ingredients

  • Dressing:
  • 4 boneless, skinless chicken breasts
  • 6 cups salad greens
  • 1 cup sliced strawberries or kiwi
  • 1 mango peeled, pitted and sliced
  • 1 avacado peeled, pitted and sliced
  • 1/4 cup chopped fresh cilantro
  • 1/2 cup margarita mix
  • 1/4 cup olive oil
  • 2 tablespoons tequila or white wine vinegar

Preparation

Step 1

Season chicken, grill 15-20 minutes brushing occasionally with 1/4 cup dressing. Cut chicken into slices. Arrange salad on plates, top with chicken and kiwi. Arrange mango and avacado slices around salad. Sprinkle with cilantro and drizzle remaining dressing on top.

Dressing:
Beat ingredients together.
