Ingredients
- Add:
- 2 1/4 to 2 1/2 lbs yellow sweet potatoes, boil, peel and mash
- 3 eggs, slightly beaten
- 1/2 c. sugar
- 6 T. butter
- 1/2 c. orange juice
Preparation
Step 1
Mix well. Add 1/2 cup chopped pecans, 1/2 teaspoon each of salt and vanilla. Bake in a buttered casserole, uncovered, for 30 minutes at 350 degrees. May be refrigerated overnight and baked about 50 minutes.
