Rotisserie - Apricot Glaze for Chicken (Swanson Flavor Boost)

Ingredients

  • 1/3 cup apricot preserved
  • 1 Tbsp. whole-grain mustard
  • 1 pkg (.5 oz.) Swanson flavor Boost, divided
  • 2 Tbsp. butter, at room temp
  • 1 tea. Mediterranean herb seasoning
  • 1 whole roaster chicken 9about 5 lb)

Preparation

Step 1

Heat grill. In bowl, combine apricot preserves, whole-grain mustard and 1/2 chicken broth concentrate (about 1 1/2 tea); set aside.

In small bowl, combine butter, herb seasoning and 1/2 chicken broth concentrate. Rub herb mixture under and over skin of chicken. Place chicken in grill safe roasting pan.

Place roasting pan on grill over indirect heat. Cook, covered, 1 hour 15 minutes or until 165 degrees, brushing with apricot mixture during the lst 15 minutes of cooking.

Let sit 10 minutes before slicing
