Ingredients
- 1 3/4 cups unbleached flour
- 1 t. baking soda
- 1/2 t. table salt
- 6 large very ripe bananas peeled
- 8 T unsalted butter, melted and cooled slightly
- 2 large eggs
- 3/4 cup packed light borwn sugar
- 1 t. vanilla
- 1/2 cup walnuts, toasted, optional
- 2 t. granulated sugar
Preparation
Step 1
Heat oven to 350
Spray 81/2 by 4 1/2 loaf pan with nonstick cooking spray. Whisk flour, baking soda and salt in lasrge bowl.
Place 5 bananas in microwave safe bowl, cover with plastic wrap and cup steam vents, Microwave on hight until bananas are soft about 5 min. Transfer to fine-mesh strainer and allow to drain stirring occas. 15 min. shoudl have 1/2 to 3/4 cup liquid
Tansfer liquid to saucepan and cook over medium high until reduced to 1/4 cup about 5 min. Sitre into bananas and mash until fiarly smooth. Whisk in butter, eggs born sugar and vanilla.
Pour into blour misture and stir until just combined with some streaks of flour. Slice remaining banana across top along sides. Sprinkle with sugar. Bake until toothpick comes out clean, 55 to75 min. Cool for 15 min. the remove loaf from pan.
