Chicken Pot Pie

Ingredients

  • VELOUTE SAUCE:
  • 1/4 cup margarine
  • 1/4 cup flour
  • 1 cup milk
  • 1 1/2 cups boiling wter
  • 2 OXO chicken cubes
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • FILLING MIXTURE:
  • 2 1/2 cups (or more) diced chicken or turkey
  • 1 tsp salt
  • 1/4 tsp pepper
  • 2 cups cooked carrots, diced
  • 1 12 oz pkg cooked frozen peas
  • 1 Veloute sauce recipe
  • TOPPING:
  • 1 1/2 cups biscuit mix
  • 1/2 cup sour cream
  • 1 egg, beaten

Preparation

Step 1

Melt margarine, blend in flour, add milk gradually, stirring constantly. Boil 2 OXO chicken cubes in 1 1.2 cups of water. Add to sauce, bring to a boil and simmer 5 minutes.

Combine filling ingredients and place the mixture in a baking dish.


Combine sour cream and biscuit mix to form a dough. Knead and roll out. Cut into 1" strips. Make a latice topping. Brush egg over strips of dough. Bake at 400 degrees for 30 minutes
