Sweet cherry upside down cake

Ingredients

  • One quarter cup butter
  • 1/2 teaspoon ground cinnamon
  • 1/2 cup packed light brown sugar
  • 3 cups pitted sweet cherries
  • 1 2/3 cup bleached all-purpose flour
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup butter softened
  • 1/2 teaspoon almond extract
  • 1 cup sugar
  • 2 large eggs
  • 1/2 cup sour cream

Preparation

Step 1

Heat oven to 350°.
Grease an 11 x 7 baking dish.
Melt first butter in first Brown sugar until bubbly.
Stir in cinnamon.
Pour into greased pan and top with cherries.
Whisk in dry ingredients together.
Cream butter, flavoring and sugar until light and fluffy.
Add eggs.
At low speed add flour mixture in three parts alternating with sour cream just until smooth.
Spoon batter over cherries.
Bake 45 to 50 minutes until cake is golden brown and cake springs back when touched.
Cool for 15 minutes and turn out onto platter.
Serve with whipped cream.
