Turmeric New Potatoes

Ingredients

  • 2 lbs new potatoes
  • 1/4 cup canola oil
  • 1 1/2 cups chopped onion
  • 1 tsp turmeric
  • 1 tbsp salt
  • 1/2 tsp ground cayenne pepper
  • 1/4 cup water
  • 5 oz baby spinach

Preparation

Step 1

Wash and scub potatoes. Cut in 1/4 inch rounds. Heat oil in frying pan on medium for 1 minute. Add onions and sauté for 5 minutes. Add turmeric, salt, and cayenne, stir well and cook for 1 minute. Add potatoes and water and bring to a boil. Gently stir the potatoes. Reduce heat to low, cover and cook 10 minutes If they are sticking or burning add another 1/4 cup water. Gently stir again. Cover and cook another 5 minutes. The potatoes should maintain their shape and not get too soft. If using spinach, gently stir in 1 minute before turning off the heat.
