Ingredients
- 250 g punnet cherry tomatoes, halved
- Pinch of caster sugar
- 1 T thyme leaves
- 2 125 g balls mozzarella, torn
- 12 thin slices prosciutto
- 8 basil leaves, torn
- EVOO, to drizzle
Preparation
Step 1
Preheat oven to 100C, and line baking tray with baking paper. Lay tomatoes, cut side up on the tray, sprinkle with sugar and thyme, season, then bake for 1.5 hours until dried. Cool completely.
Arrange cheese, prosciutto, tomateo and basil on 4 plates, drizzled with oil and serve.
