CARROT CAKE

Ingredients

  • cake:
  • 2 c all purpose flour
  • 1 tsp vanilla
  • 3 eggs
  • 2 c granulated sugar
  • 1 c walnuts
  • 2 tsp baking soda
  • 1/2 tsp salt
  • 1 c vegetable oil
  • 2 c grated carrots
  • 1 tsp cinnamon
  • 1 c pineapple
  • 1 c coconut
  • topping:
  • 1/3 c granulated sugar
  • 1/6 c butter
  • 1/6 c buttermilk
  • 1/2 tsp baking soda
  • 1/3 tsp vanilla

Preparation

Step 1

1) for cake, mix all ingredients in a bowl. bake at 350 40-45 minutes in greased 9x13 baking pan.

2) for topping:
mix all ingredients in a pot, cook at medium heat for 5 minutes until all blended. Pour over cooled cake.
