Lemonade Cookies

Ingredients

  • 1 cup (2 sticks) butter, softened
  • 1 cup plus 2 tablespoons sugar
  • 2 eggs
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 (6 ounce) can frozen lemonade concentrate, thawed, divided
  • 1 tablespoon grated lemon peel

Preparation

Step 1

Preheat oven to 400 degrees F.

In a large bowl, cream together butter and 1 cup sugar. Add eggs, beating well. In another large bowl, combine flour and baking soda and add alternately with 1/2 cup of lemonade concentrate into egg mixture. Stir in lemon peel.

Drop by teaspoonfuls 2 inches apart onto ungreased cookie sheets. Bake 8 to 9 minutes or until edges are light brown.

Remove from oven and brush hot cookies lightly with remaining lemonade concentrate. Sprinkle cookies with remaining 2 tablespoons sugar.

Notes:
Make sure to thaw the lemonade concentrate in the refrigerator overnight.
