FETTUCCINE WITH HAM & PEAS

Ingredients

  • 1 medium-size onion, finely chopped
  • 3 Tbsps butter
  • 2 cups thinly sliced mushrooms (about 8 oz)
  • 1 1/2 cups heavy cream
  • 2 cups 3 x 1/4-inch strips cooked ham (about 2/3 pound)
  • 1 pkg (10 oz) frozen peas, thawed and drained
  • 1 box (12 oz) fettuccine
  • 1 cup grated parmesan cheese
  • 1/2 tsp black pepper

Preparation

Step 1

Bring large pot of water to boiling for fettuccine.

Meanwhile, sauté onion in butter in large skillet until softened but not browned, about 5 minutes.

Add mushrooms; brown slightly, about 4 minutes. Stir in cream; simmer 2 minutes.

Add ham and peas. Cook until heated through, stirring, about 3 minutes.

Meanwhile, cook fettuccine in boiling water until tender but firm. Drain. Place in serving bowl.

Stir Parmesan into sauce in skillet. Add sauce to fettuccine, along with pepper; toss.
