Ingredients
- 4 chicken breasts, boned and skinned
- 4 slices swiss cheese
- 4 ham slices
- 1/4 cup flour
- 1 tsp salt
- 1/8 tsp pepper
- 1/8 tsp tarragon
- 1 beaten egg
- 1 cup crushed corn flakes
- 1/4 cup melted butter
Preparation
Step 1
Wrap each breast in plastic wrap and pound to flatten. Place a slice of cheese and ham on each breast and fold short side over. Roll each breast from long side to enclose filling.
Coat with mixture of flour, salt, pepper and tarragon. Dip in beaten egg, then coat with the crushed corn flakes. Arrange in a circle on a microwave plate. Drizzle with melted butter. Cook on high power for 2 minutes per roll. Let stand covered for 5 minutes.
