Cinnamon Buns

Ingredients

  • Rolls:
  • 2 packages dry yeast
  • 1/2 cup warm water or more if needed
  • 4 eggs
  • 1/2 cup sugar
  • 2 teaspoons salt
  • 5 cups all-purpose flour
  • 1/2 cup butter, melted
  • Filling:
  • 1 cup sugar
  • 1 cup brown sugar
  • 1 tablespoon ground cinnamon
  • 1 cup roasted chopped pecans
  • Goo:
  • 2 sticks unsalted butter
  • 2 cups brown sugar
  • 3 tablespoons honey
  • 1/2 cup whipping cream
  • 1/2 cup water

Preparation

Step 1

Preheat oven to 350 degrees.

Dough:

Dissolve yeast in water in a bowl of a standing mixer with dough hook. Let sit for 5 minutes.

Using the whisk, beat eggs, sugar and salt to the bowl of yeast. Switch to dough hook and add 1 cup flour and mix until smooth. Add melted butter and mix well. Add the remaining 4 cups of flour in stages and mix until stiff dough is formed. Add dough to the bowl. Place bowl in a warm area with a towel on top. Let rise until it doubles in size, about 2 hours.

Filling:

On a floured surface, roll out dough into a 12 x 15 rectangle. Combine brown sugar, sugar, cinnamon and pecans and sprinkle evenly on the dough. Roll up the dough jelly roll-style and slice the rolls into buns about 1 inch thick.

Goo:

In a saucepan over medium heat, melt together the butter and brown sugar. Remove from heat, let cool, whisk in honey cream and water. Place the Goo on the bottom of a roasting pan and place buns, evenly spaced, in the pan. Cover and allow to rise for 2-3 hours in a warm place.

Bake for 30 to 45 minutes until golden brown. Let cool for 10 minutes.
