Oven-Barbecued Pot Roast

Jack and I both enjoyed this very much and, happily, it was very simple and easy to assemble. This is a keeper!

Ingredients
- BARBECUE SAUCE:
- 1 (3-4 lb.) chuck roast
- 1/2 cup flour
- 1 tsp salt
- Pepper, to taste
- 2 onions, sliced
- ........................
- 2/3 cup catsup
- 2/3 cup water
- 1 Tbsp Worcestershire sauce
- 3 Tbsp soy sauce
- 1/2 cup brown sugar
- 1/8 tsp liquid smoke (optional)
Preparation
Step 1
1. Dredge roast with flour, salt and pepper. (I used Paula Deen's House Seasoning Mix!)
2. Place roast in a Dutch oven. Add sliced onions.
3. Combine catsup, water, Worcestershire sauce, soy sauce and brown sugar. Pour over roast. Cover and place in 325 degree oven. Bake for 3-3 1/2 hours.
Last hour, add peeled and cut potatoes and carrots, if desired.
