Ingredients
- Cookie:
- 1 1/4 c. butter (softened) 1 egg
- 1 c. brown sugar (packed) 2 tsp. vanilla
- 1/2 c. sugar 1 tsp. baking soda
- 1 1/2 c. flour 1 tsp. salt
- 3 c. oats 1/4 tsp. cinnamon
- Cream filling:
- 1/2 c. butter (softened)
- 1 7-ounce container Marshmellow Fluff
- 3 c. powdered sugar
- 1 tsp. vanilla
Preparation
Step 1
In a mixer, cream the butter. Add sugars and continue mixing until the mixture is creamy. Add egg and vanilla, mix well. In a separate bowl, mix the dry ingredients together (oats, flour, baking soda, salt, cinnamon). Add dry ingredients to wet ingredients and blend. Drop rounded balls onto a baking sheet and bake at 375 degrees for 11 minutes. Once cooked, place on a wire rack to cool completely.
Cream together butter and marshmellow. Slowly add the powdered sugar and vanilla and beat until smooth and fluffy.
Add 1 T. scoop of cream filling to the bottom of 1 cookie and add another cookie to the top to make your Oatmeal Cream Pie!
