Fried Shrimp with Spicy Remoulade

Ingredients
- SPICY REMOULADE SAUCE:
- SHRIMP
- Peanut oil, for frying
- 1 cup buttermilk
- 1 egg, lightly beaten
- 1 TBSP Creole mustard
- 1 TBSP hot sauce
- 1/2 cup self-rising flour
- 1/2 cup yellow cornmeal
- 2 tsp paprika
- 2 tsp kosher salt
- 1 tsp cayenne
- 1 tsp garlic powder
- 1 1/2 lbs shrimp, peeled and deveined
- 1 shallot, finely chopped
- 2 TBSP finely chopped fresh parsley
- 1/2 tsp cayenne
- 3/4 cup mayo
- 2 TBSP Creole mustard
- 1 TBSP hot sauce
- Juice of 1/2 lemon

Step 1
SHRIMP:
Heat deep fryer with peanut oil to 375.
Whisk together buttermilk, egg, and mustard in a casserole dish. In another casserole dish, whisk together flour, cornmeal, paprika, salt, cayenne, and garlic powder.
Dredge the shrimp in the dry mixture, then into the wet mixture, then back into the dry. Add the shrimp in batches to the fryer and cook til golden, about 2 minutes a batch.
SAUCE:
Combine all ingredients in a bowl. Stir til well combined. Chill til ready to serve.
