Whisk the eggs, S&P, and milk together until light and frothy. Add 1 T unsalted butter to a 10-12 inch pan. Place skillet over high heat, when the butter bubbles(about 1 min) pour eggs onto the center of the pan. Stir slowly with a spatula. As soon as curds form drop the heat from high to lowland shift from stirring to folding the curds over on themselves.while gently shaking the pan with the other hand. As son as no more liquid is running around pan. Turn off heat and gently transfer eggs to pre warmed plate. Allow them to rest for a minute to finish cooking.
