Spicy bean salad

Ingredients

  • Spicy Bean Salad:
  • 1 large green pepper, diced
  • 1 large red onion, diced
  • 15 oz can kidney beans, drained, rinsed
  • 15 oz can pinto beans, drained, rinsed
  • 15 oz can black beans, drained, rinsed
  • 1 C salsa
  • 2 T Red wine vinegar
  • 2 T olive oil
  • 3 T chopped cilantro
  • Small Head cabbage, shredded
  • 1 onion, sliced thinly
  • 2 T oil
  • salt, pepper

Preparation

Step 1

Stir the peppers, onion, and all beans in a large bowl. Beat the salsa, vinegar, olive oil and cilantro together in a small bowl and pour over bean mixture.

In large skillet cook onions in oil until tender. Add cabbage and stir. Cover and cook until cabbage starts to stick. Add 1 to 2 cups water and stir well. Let cook down, add salt and pepper to taste.
