Carrot Bread

Ingredients

  • 3 cups flour
  • 1 tsp soda
  • 1 tsp cinnamon
  • 2 cups sugar
  • 3/4 tsp salt
  • 1 cup pecans or walnuts, chopped
  • 3 eggs
  • 2 cups grated carrot
  • 1 cup oil
  • 1 8oz can crushed pineapple, drained
  • 2 tsp vanilla

Preparation

Step 1

Combine first six ingredients. Stir well.
Combine eggs and remaining 4 ingredients; add to flour mixture. Stir until just moistened.
Spoon into 2 greased 9x5 pans.
Bake 350 about an hour.
