  • Carrot and Nut Loaf:

  • 2

    C grated carrots

  • 2

    C croutons, crumbled

  • ½

    Cup Italian Blend Cheese

  • 1

    large onion, finely grated

  • ½

    C chopped nuts

  • 3

    eggs, beaten

  • (Non-stick spray)

  • 1

    C half & half

  • 2-3

    T chopped cilantro

  • Head of Cauliflower

  • Salt, pepper, butter


Preheat oven to 350. Combine carrots, croutons, cheese, onion, and nuts. Beat eggs with half and half. Add cilantro, stir into carrot mixture and pour into sprayed loaf pan. Bake for 1 hour. Let cool for several minutes and slice in pan. Cut cauliflower in florets and speam until tender. Add salt, pepper, and butter.
