- Meat strips from 3 or 4 suckers
- Salt to taste
- Freshly-ground black pepper to taste
- 1 cup flour
- 1 cup Bisquick baking mix
- 1 cup cornmeal
- 2 tablespoons chili powder
- 1 teaspoon garlic powder
- Peanut oil for deep frying
Season the fish strips with salt and pepper. Combine flour, Bisquick, cornmeal and seasonings. Dredge the strips in this mixture, and fry quickly in peanut oil heated to 375 degrees.
