Curried Bear Meatballs
- 2 1/2 pounds ground bear meat
- 3 slices bread moistened with milk
- 1 tablespoon curry powder
- 3 tablespoons cooking oil
- 3 onions diced
- 1 green pepper diced
- 5 garlic cloves minced
- 2 tablespoons flour
- 1 cup beef broth
- 1 cup red wine
- Juice of 1/2 lemon
- 1 orange rind grated
- 2 apples cored, peeled, and diced
- 2 tablespoons orange marmalade
- 2 teaspoons ketchup
- 1/2 cup raisins
- 1/2 cup coconut
- Brown sugar to taste
Mix meat, moistened bread and curry powder. Form into 1 1/2-inch meatballs, and brown in oil.
When meatballs are browned, drain most of the oil. Sauté onions, pepper and garlic until soft. Stir in flour; remove from heat. Stir in broth and wine.
Add remaining ingredients, return to the heat, and stir until bubbling. Cover and simmer 30 to 45 minutes, adding broth or wine as needed.
Add a small amount of brown sugar, additional salt, black pepper and curry to taste. Serve with rice.
