Swiss Cheese Potato Pie

Ingredients

  • 6 eggs
  • 1 cup chopped green onions
  • 1/2 tea. salt
  • 1/2 tea. pepper
  • 3 cups diced, peeled and cooked potatoes, or frozen diced hash browns, thawed
  • 6 oz. grated Swiss cheese
  • 4 oz. bacon or ham, diced
  • 1/2 cup diced green bell pepper
  • 1/2 cup milk

Preparation

Step 1

Preheat oven to 350 degrees. Generously butter a 9" pie dish.

Whisk eggs, onions, salt and pepper in a large bowl. Add potatoes, cheese, ham or bacon, bell pepper and milk, stirring to blend.

Pour into prepared dish. Bake until set, about 1 hour and 20 minutes.

Cut into wedges.
