BBQ Sauce - Mango

Ingredients

  • 2 Tbsp. olive oil
  • 1 small onion, diced (about 1 cup)
  • 3 cloves garlic, coarsely chopped (about 1 Tbsp)
  • 1 tea. salt
  • black pepper
  • 1/2 tea. ground allspice
  • 1/3 cup red wine vinegar
  • 3 Tbsp. red wine vinegar
  • 3 Tbsp. molasses
  • 2 Tbsp. Worcestershire sauce
  • 2 Tbsp. fresh lime juice
  • 1/4 cup tomato sauce
  • 1 medium ripe mango, peeled, pitted and diced (about 1 1/3 cups)
  • 2-3 jalapeno peppers, seeded and minced

Preparation

Step 1

Heat oil in a medium skillet over medium-high heat. Add the onion and cook, stirring a few times, until translucent, about 3 minutes. Add garlic, salt, pepper and allspice and coo, stirring, for 2 minutes more. Stir in the vinegar, molasses, worcestershire, lime juice and tomato sauce and cook for 1 minute more.

Transfer the mixture to a blender and add the mango and jalapenos. Blend until smooth.
