Pork Pot Roast Pressure Cooker

Ingredients

  • Roast:
  • 4 tbs oil
  • 2-3 lb pork loin, shoulder of butt, seasoned with 1/2 tsp salt and pepper
  • 1/2 cup dry white wine
  • 2 cups chicken stock
  • 2 tbs minced garlic
  • 1 sprig fresh thyme or 1 tsp dried
  • 2 bay leaves
  • Vegetables:
  • 6 small red potatoes, halved
  • 2 small onions, peeled and quartered
  • 1 cup baby carrots
  • 2 stalks celery, cut into 1 in pieces
  • 2 tbs corn starch
  • Salt and pepper to taste

Step 1

1. Add the oil to cooker and heat on brown until sizzling. Brown the seasoned roast well on all sides.

2. Add remaining roast ingredients to cooker and set to high and cook for 40 min.

3. Let pressure release naturally for 10 min before quick release

4. Add all vegetable ingredients, except corn starch and re-lock the cooker set at high for an add'l 5 min.

5. Perform a quick release and set roast aside under tin foil to rest.
Set the cooker on brown and bring liquids to simmering. Slowly add corn starch mixed into 2 tbs water into liquids, stirring constantly until thick.

6. Carve roast and serve with vegies and gravy
