Black Bean and Hominy Chili

Ingredients

  • 1 (15.5 oz) golden hominy, drained
  • 1 (15 oz) no salt added black beans, drained
  • 1 (14 1/2 oz) no-salt added diced tomatoes, drained
  • 1 (10 3/4 oz) reduced-fat reduced-sodium tomato with garden herbs and ground peppercorns soup, undiluted
  • 1 (4.5 oz) chopped green chilies, undrained
  • 3/4 c. water
  • 1 T. chili powder
  • 1 t. ground cumin

Preparation

Step 1

Combine all ingredients in a large saucepan; bring to a boil. Reduce heat and simmer, uncovered 15 minutes or until thoroughly heated, stirring occasionally.
