Elaine's Cranberry-Orange Pound Cake

Cake mix and instant pudding mix speed the prep of this irresistibly rich crimson-studded pound cake.

JUST SENT YOU A RECIPE FROM THE BISQUICK SITE THAT I MADE YESTERDAY!! DO YOU REMEMBER MY TELLING YOU ABOUT THE CRANBERRY BUNDT CAKE I USED TO GET AT SAM'S AND LOVED SO MUCH BUT TO MY HORROR WHEN TRYING TO PURCHASE LAST YEAR WAS TOLD THEY NO LONGER MAKE THEM????? I HAVE SEARCHED IN VAIN FOR A COMPARABLE RECIPE TO RECREATE THIS AWESOME CAKE AND WELL, I'VE FOUND IT.

SO QUICK AND EASY AND SO VERY, VERY GOOD. IT CALLS FOR A 12 CUP BUNDT PAN BUT I ONLY HAVE A 10 SO I TOOK OUT 2 CUPS OF THE BATTER AND MADE CUPCAKES FROM IT RATHER THAN THROW OUT THE EXCESS BATTER. I ALSO MADE THE ORANGE BUTTER SAUCE WHICH IS WONDERFUL DRIZZLED OVER EACH PIECE BUT FOUND THAT IT IS NOT ABSOLUTELY NECESSARY BECAUSE IT'S GREAT JUST THE WAY IT IS!!!

I USED A DUNCAN HINES YELLOW CAKE THAT I HAD ON HAND AND I USED A COUPLE OF NAVEL ORANGES FOR THE 1/2 CUP OF JUICE. WITH YOUR MORE THAN ADEQUATE SUPPLY OF GREAT ORANGES IN THE AREA, YOURS WILL BE FAR BETTER THAN MINE, I'M SURE!! I JUST CAN'T GET JOHN'S ORANGES OFF MY MIND AS I HAVE NEVER, EVER TASTED ANYTHING QUITE LIKE THEM IN MY LIFETIME!!!! I HIGHLY RECOMMEND THIS CAKE, NANCY. I KNOW THAT I WILL MAKE IT MANY TIMES OVER!!!!!

Also, I didn't chop my berries super fine but cut them in quarters.

Ingredients

  • 1 package Betty Crocker SuperMoist golden vanilla or yellow cake mix
  • 1 package (4-serving size) vanilla instant pudding and pie filling mix
  • 1 cup water
  • 1/2 cup butter or margarine, melted
  • 1 teaspoon grated orange peel
  • 4 eggs
  • 1 1/2 cups fresh or frozen cranberries, chopped (do not thaw frozen cranberries)

  • Orange Butter Sauce (See Below)

Preparation

Step 1

1. Heat oven to 350ºF. Grease and flour 12-cup bundt cake pan.

2. Beat cake mix (dry), pudding mix (dry), water, butter, orange peel and eggs in large bowl with electric mixer on low speed 30 seconds, scraping bowl constantly. Beat on medium speed 2 minutes. Fold in cranberries. Spread in pan.

3. Bake 1 hour 5 minutes to 1 hour 10 minutes or until cake springs back when touched lightly in center. Cool 15 minutes; remove from pan. Cool completely, about 1 hour.

4. Serve with warm Orange Butter Sauce.

Orange Butter Sauce:

1 cup sugar
1 tablespoon all-purpose flour
1/2 cup orange juice
1/2 cup butter

Mix sugar and flour in 1-quart saucepan. Stir in orange juice. Add butter. Cook over medium heat about 4 minutes, stirring constantly, until thickened and bubbly.
