Crostini with Tomatoes (Bruschetta)

Ingredients

  • 1 1/2 lbs Roma tomatoes
  • 1 tsp. salt
  • 2 cloves garlic
  • 2 T. fresh basil
  • 2 T. parsley (less, if desired)
  • 1/4 c. olive oil
  • Pepper, to taste
  • 1 loaf French or Italian bread

Preparation

Step 1

Process tomatoes in short intervals. Strain with salt, 15 to 20 minutes. In medium bowl, combine tomatoes with garlic, basil and parsley. Gradually whisk in olive oil until blended. Season with pepper to taste. Slice bread (1/4 to 1/2" slices) and toast bread for 10 minutes in 350 degree oven. Serve as dip or garnish with fresh grated Parmesan cheese.
