    c flour

  • 1

    tbsp baking powder

  • 1

    tsp baking soda

  • 1

    tsp cinnamon

  • 1/2

    tsp nutmeg

  • 1/2

    tsp ginger

  • 1

    c strong coffee

  • 1 1/4

    c honey

  • 4

    eggs

  • 1

    c light brown sugar

  • 1/2

    c vegetable oil

  • 1

    apple grated

  • 1/2

    c golden raisins or dates

Directions

Preheat oven to 300. Grease and flour two 9x5" pans or 1 bundt pan. Combine flour, baking powder, baking soda, cinnamon, nutmeg and ginger in a large bowl. Stir together coffee and honey in a separate bowl. Beat eggs until light and fluffy. Add brown sugar gradualy, and beat until well incorporated. Beat in vegetable oil. Stir in apple and raisins. Beat half of flour mixture and all of honey mixture into the egg mixture. Stir in remaining flour. Pour batter into pan and bake for 1 hour to 1 hour 15 minutes or until cake is springy to the touch and a cake tester comes out clean. Cool in cake pan and leave in a cool place, covered for 24 hours to allow flavours to mellow.
