Penne with Butternut Squash and Shrimp

Ingredients

  • 1/2 lb penne pasta
  • 1 cup chopped butternut squash
  • 1/4 lb uncooked and cleaned shrimp
  • 2 cloves garlic
  • 1/4 cup olive oil

Preparation

Step 1

In a medium frying pan, brown garlic in olive oil.
Add butternut squash and cook until soft.
Remove from pan and mash slightly.

Place penne in a pot of water and bring to a boil, cook for 5-7 minutes.
Reserve 1/2 cup pasta water, drain the rest and set pasta aside.

In a large frying pan. add squash, shrimp, penne and a little pasta water, simmering for a few minutes.
Taste to be sure penne is firm but not undercooked.
Add salt and pepper to taste.
