Pasta with Sausage & Peppers

Ingredients
- 2 lbs sweet Italian sausage
- 3 tblsp olive oil
- 1 c. finely chopped yellow onion
- 3 sweet red peppers - stemmed ribbed & seeded - cut into julienne strips
- 1 c. dry red wine
- 1 can (2lbs 3oz) Italian plum tomatoes including the liquid
- 1 c. water
- 1 tblsp dried oregano
- 1 tsp dried thyme
- s&p, dried red pepper flakes
- 1 tsp fennel seeds
- 1/2 c. chopped parsley
- 6 or more garlic cloves

Preparation
Step 1
Prick sausage links with fork and put them in pot with 1/2 inch of water
Simmer uncovered for 20 min.
Water will evaporate & sausage will brown in its own fat - turn occasionally for 10 more min
Remove sausages & place on paper towels
Pour fat out of pot but do not wash pot - set it over lo heat - add olive oil & onions
Cook until tender - 25 min
Add peppers & raise the heat & cook for 5 more min. - uncovered
Add wine, tomatoes, water spices - bring to a boil - then reduce heat & simmer partially covered for 30 min.
Meanwhile slice the sausages into 1/2" thick rounds - when sauce has simmered 30 min
add sausages, fennel seed & simmer uncovered for another 20 min
Add parsley & chopped garlic & simmer 5 min
Yields 2 qts sauce for 2 lbs pasta
