Buttermilk White Sauce

Used for Green Bean Casserole.
Measure the flour as you would for baking by lightly spooning it into a measuring cup and leveling with the back of a knife. this will help you avoid a thick, pastelike sauce. Don't try to add both milk and buttermilk at one time - the sauce will curdle.
Sauce can be made up to 2 days ahead. Prepare recipe as directed; cover and chill in an airtight container. Whisk in 2 Tbsp milk and microwave on HIGH for 1 minute, stirring at 30 second intervals.

- 2 Tbsp butter
- 1/3 cup all purpose flour
- 1 1/2 cups milk
- 1/2 cup buttermilk
- 1 Tbsp ranch dressing mix (the dry stuff)
- 1/4 tsp salt
- 1/4 tsp pepper

Step 1
Melt butter in a medium bheavy saucepan over medium heat; whisk in flour until smooth. Cook 1 minute, whisking constantly. Gradually whisk in 1 1/2 cups milk; cook over medium heat,whisking constantly, 3 to 4 minutes or until mixture is thickened and bubbly. Remove from heat, and whisk in buttermilk and remaining ingredients.
