Mini Blueberry Muffins

Ingredients

  • 1/2 cup butter or margarine
  • 1 and 1/4 cups sugar
  • 2 eggs
  • 1 cup sour cream or plain yogurt
  • 1 teaspoon vanilla
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 cups flour
  • 2 cups blueberries, fresh or frozen

Preparation

Step 1

Preheat oven to 375 degrees. Cream margarine and sugar together. Add eggs and beat until smooth. Mix in sour cream and vanilla. Combine dry ingredients and stir into creamed mixture. Fold in blueberries. Spoon into mini muffin pan that has been lined with mini-paper liners, filling half full. Bake for 18-20 minutes. Dust muffins with powdered sugar when cool.
