Day 3-Smoky Turkey and Veggie Frittata Recipe

Ingredients

  • 1 tablespoon olive oil
  • 2 cups assorted fresh vegetables (see Note), cut into bite-size pieces
  • 6 large eggs
  • 3 tablespoons skim milk
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 1/2 cups cubed cooked turkey breast
  • 1 cup diced smoked Gouda (4 ounces)
  • 1 tablespoon chopped fresh parsley

1. Pre-Heat oven to 325 degree F.
Spray a 10-inch oven-safe nonstick skillet with nonstick cooking spray. Add olive oil to skillet and heat over medium heat. Add vegetables and cook 7 minutes, until tender.

2. In a large bowl, whisk together the eggs, milk, salt and pepper. Stir in turkey and 1/2 cup of the Gouda.

3. Pour egg mixture into skillet. Cook over medium-high heat for 5 minutes, stirring gently halfway through cooking. Sprinkle remaining 1/2 cup cheese over top of mixture, and transfer skillet to oven. Bake at 325 degree F for 20 minutes. To serve, gently slide onto plate and cut into 4 servings. Garnish with parsley.

Note:
Look for fresh, assorted, cut-up vegetables for stir-frying in your local supermarkets produce department.
