Bear Cooked Hunters Style
- 3 pounds bear meat
- 2 tablespoons butter
- 1 onion chopped
- 1 piece ham, 2" square minced fine
- 1 tablespoon flour
- 1 garlic clove
- 2 sprigs thyme
- 2 bay leaves
- 1/2 box mushrooms
- Zest of 1 lemon
- 1 glass white wine
- Salt to taste
- Freshly-ground black pepper to taste
Cut meat into 2-inch squares. Salt and pepper well.
Put 2 tablespoons butter into sauce pan with meat and brown. When nearly brown add onion, ham, garlic, bay leaf and thyme. Stir in with meat and brown 2 minutes.
Add 1 tablespoon flour and brown. Add wine and simmer 5 minutes.
Add 1 quart consommé or water; cook 1/2 hour longer and serve hot over cooked noodles.
