Campbell's Microwave Meatball Stew 1 Picture

Ingredients

  • Meatball:
  • 1 egg beaten
  • 1/2 cup dry bread crumbs
  • 1/2 cup finely chopped onion
  • 2 tablespoons dry onion soup mix
  • 1 lb. ground beef
  • or just buy frozen meatballs and thaw
  • 1 can (16 ozs.) whole new potatoes (drained and quartered)
  • 1 1/4 cups sliced frozen carrots
  • 1 1/2 cup pearl onions (freezer section)
  • 1 can Campbell's Cream of Mushroom soup
  • 1 can beef broth or beef stock
  • 1/2 teaspoon dried savory
  • 1/4 teaspoon dried thyme
  • 2 tablespoons cornstarch
  • 2 tablespoons water
  • 1/4 teaspoon browning sauce (optional)
  • frozen peas can also be added

Preparation

Step 1

If making the meatballs, combine all of the meatball mixture and form into 1 1/2" balls. If frozen, just defrost. Using microwave safe casserole dish, cook raw meatballs until no longer pink. Drain juices. Combine meatballs, vegetables, soups and seasonings. In small bowl combine cornstarch, water and browning sauce; stir into the stew. Microwave on high for 3 minutes or until everything is heated and sauce is thickened and bubbly. Stir every minute to distribute heat and sauce.
