Nancy's Microwave Jambalaya

MY NOTES: Sometimes I saute the rice with the spices in a little oil for a few minutes, to bring out the flavor of the seasonings. This makes for a much darker color red in the finished result. We like it both ways. Jack really enjoys this meal - asks for it regularly - and it is a delightfully EASY dinner to make! You can make it with one kind of meat or several, to use up leftovers.
Ingredients
- 1 cup uncooked regular rice
- Garlic powder to taste
- Chili powder to taste
- Cumin to taste
- Celery salt to taste
- Salt and pepper to taste
- Hot sauce to taste
- Finely diced onion and green pepper to taste
Preparation
Step 1
1. Mix all ingredients in microwave-safe dish.
2. Add 1 can of tomato soup and 1 1/2 soup cans of water or chicken broth. Microwave on HIGH, covered, for 10 minutes. Stir.
3. Microwave for 10 more minutes. (still covered) (Add a little water, if necessary - don't let it get TOO dry.) Stir.
4. Add diced kielbasa, and diced cooked chicken or ham. Return to microwave, covered, until rice is cooked, about 10-15 minutes.
5. Add 1/2 cup frozen peas. Return to microwave 1 minute.
If desired, finally add some cooked shrimp and microwave two more minutes. (We love it with the shrimp!) Stir and serve.
