Collard Greens Wraps

Broad, flat leaves of collard greens make them a great substitute for tortillas.

Ingredients

  • 1 bunch collard greens
  • cubed, cooked chicken (about 2 breasts)
  • feta cheese
  • 1-2 roasted red peppers

Preparation

Step 1

Make a mixture of the cubed chicken, feta and roasted peppers. Trim out thick center vein of greens, then steam for about 2 mins until they are bright green but not wilted. Fold and stuff with the chicken mixture. Bake at 325 for 10-15 minutes.
