Avocado & Shrimp Salad

Ingredients

  • 3 tbs evoo
  • 2 tbs white wine vinegar
  • 1 tsp dijon mustard
  • 1 # fresh shrimp cooked, cleaned, cubed
  • 1 c mayo
  • 2 tbs chili sauce
  • 1 clove minced garlic
  • dash of hot pepper sauce
  • 1 large avocado
  • juice of 1/2 lemon
  • 2 tbs fresh dill
  • 2 tbs chives

Preparation

Step 1

Peel, pit and cube avocado. Sprinkle w lemon juice
Mix oil, vinegar and dijon and toss with shrimp. Whisk mayo, chili sauce, garlic and hot pepper sauce.
Drain shrimp-add avocado, dill, chives and toss. Divide salad put a dollop of mayo mixture on top and garnish with dill and lemon slices.
