Ingredients
- 1 cup yellow cornmeal
- 1 cup all-purpose flour
- 1 teaspoon salt
- 1 tablespoon double-acting baking powder
- 2 large eggs, lightly beaten
- 1 1/4 cups whole milk
- 3 tablespoons warm bacon drippings
- 1/4 cup chopped cooked bacon
- 2 tablespoons chopped fresh chives

Preheat oven to 425°. Spray a 12-cup muffin pan with nonstick cooking spray. Place in oven for 3 to 4 minutes while oven preheats.
In a large bowl, sift together cornmeal, flour, salt, and baking powder. Add eggs, milk, and bacon drippings, stirring well to combine. Add bacon and chives, stirring well. Fill prepared muffin cups three-quarters full.
Bake until golden brown, 15 to 20 minutes.
