Ingredients

  • 5 to 6 medium heirloom tomatoes
  • 1/2 cup fresh corn kernels (1 ear of corn)
  • 4 slices cooked bacon, crumbled
  • 2 tablespoons red onion, thinly sliced
  • 2 tablespoons blue cheese crumbles, optional
  • 2 tablespoons red wine vinegar
  • 2 tablespoons extra virgin olive oil
  • pinch kosher salt
  • pinch fresh ground black pepper
  • 2 tablespoons fresh basil, chopped or chiffonade

If you have a chance to get a sweet heirloom tomato fresh from the farmer’s market, grab it! I have a serious love affair with these little gems every summer. Juicy, sweet, and fresh, these tomatoes combined with salty bacon, bright tangy red wine vinegar, blue cheese, and basil make for a delicious and beautiful summer salad. This plate screams summer! Without even realizing I could finish this whole plate by myself with only a drop of tomato juice left on the plate as evidence.

In a bowl briskly whisk together the red wine vinegar and olive oil until combined.

Pour the vinaigrette evenly over the salad. Sprinkle with salt and pepper and garnish with basil. Serve immediately.
