Sliced Potatoes Vinaigrette

Ingredients

  • 4 lbs tiny red new potatoes unpeeled
  • 1 cup parsley; loosely packed
  • 1/2 cup chives; snipped
  • 1 clove garlic
  • 1 1/2 cup oil
  • 1/2 cup red wine vinegar
  • 4 tsp dry mustard
  • 2 tsp salt
  • fresh ground black pepper

Preparation

Step 1

Cover potatoes in water and cook until they can just be pierced through with a sharp knife (do not over cook). Drain; cover with cold water and let stand for 12 minutes. Drain well. Mince parsley, chives and garlic. Add remaining ingredients except potatoes and blend well. Slice potatoes in thin slices and toss in vinaigrette. Serve at room temperature.
