Penne with Chicken

  • 2 tbsp. olive oil
  • 1 onion, chopped
  • 1 clove garlic, minced
  • pinch hot red pepper flakes
  • 28 oz. can plum tomatoes
  • 1 cooked chicken breast, cubed
  • salt and pepper
  • 1 lb. whole wheat penne pasta
  • 1/4 cup chopped fresh parsley



Step 1

Heat oil in skillet. Add onion, garlic and pepper flakes. Cook until tender. Add tomatoes, breaking them up with a spoon. Bring to a boil, then cook gently until sauce thickens, about 15 mins. Add chicken to sauce. Cook 5 mins. Season with salt and pepper to taste. Cook penne. Drain pasta well and combine with sauce. Sprinkle with Parmesan.
