Ingredients

  • Bottom: 1 cup all purpose flour
  • 1/4 cup packed brown sugar
  • 1/2 cup pecans
  • 1/2 cup butter or margarine melted
  • Top: 2 egg whites
  • 3/4 cup granulated sugar
  • 10 Oz. package frozen strawberries or
  • 2 cups fresh strawberries sliced
  • 2 Tbsp. lemon juice
  • 14.5 Oz. carton cool whip thawed

Preparation

Step 1

- in a bowl stir together flour, brown sugar, nuts and butter
- spread evenly in 13x9x2 pan and bake at 350 degree oven
- stir occasionally and remove from oven and cool
- sprinkle 2/3 of mixture on bottom of same pan
- reserve remaining mixture
- in large mixer bowl combine egg whites to lemon juice
- beat on low speed of electric mixture till it begins to thicken approx. 2 min
- then at high speed till stiff peaks form approx 10-12 min.
- fold in whipped cream
- spoon over mixture in pan
- top with reserved crumbs
- freeze overnight
