Shrimp and Crab Cakes

Ingredients

  • 2 lbs shrimp, 36/40, peeled and deveined, leave 1 lb whole and dice the other
  • 1 pound lump crabmeat
  • 1 cup (4 oz) scallions, chopped
  • 1 TBS minced garlic
  • 2 Ts Old Bay seasoning
  • 2 Ts worcestershire sauce
  • 1 Ts salt
  • 1/4 cup water
  • zest of 1 lemon
  • 1 TBS butter

Preparation

Step 1

Sautee the scallions and garlic in the butter till soft. Remove from pan and cool. Mix the water with the Old Bay, worcestershire and salt. Set aside.
Put the whole shrimp in a food processor and puree until smooth, while still running, add the water mixture.
Transfer to a mixing bowl and add the diced shrimp, scallion and garlic mixture, crabmeat and lemon zest. Mix until ingredients are evenly incorporated. Shape into 6 oz patties. Poach in water for 5 minutes. Shock in ice water to cool. Remove and plate.
