Donuts: Authentic Hungarian Bismarck Doughnuts

Prince Otto von Bismarck was the Chancellor of Germany from 1871 to 1890. These filled doughnuts were named after him.

Ingredients

  • 3/4 cups milk
  • 2 Tbsp. butter
  • 2-3 heaping Tbsp. sugar
  • 1 pkg. yeast
  • 4 egg yolks
  • 1/4 tsp. salt
  • 2 cups of flour

Preparation

Step 1

Boil milk, add butter and sugar, and then cool.
Add yeast to milk mixture and beat egg yolks in well with beater.
Add this mixture to flour. Let rise for 1 hour until double.
Roll out lighly on floured board to 3/8 inch thickness, and cut out 3" round circles.
Lightly cover with cloth and let rise again about 1/2 hour.
Fry in hot Crisco oil (Vegetable oil) or Lard.
Bismarcks will turn nice brown on both sides after being flipped over.
Bismarcks should drain for a few seconds on paper toweling.
If you want Jelly Bismarcks, add Jelly after they are fried. Use a pastry bag to add jelly.
You can also sprinkle powdered sugar on top of Bismarcks.
