Easy Black Bean Burgers

  • 16-oz. can of black beans, rinsed — drained
  • 1/2 green bell pepper, cut into wedges
  • 1/2 red bell pepper, cut into wedges
  • 1/2 red onion, cut into wedges
  • 3 garlic cloves, peeled
  • 1 egg
  • 1 Tbsp. chili powder
  • 1 Tbsp. cumin
  • 1 tsp. chili sauce
  • 1/2 cup bread crumbs

Preparation

If grilling, preheat an outdoor grill for high heat and lightly oil a sheet of aluminum foil. If baking, preheat the oven to 370°F and lightly oil a baking sheet.

In a medium-sized bowl, mash the black beans with a fork until they're thick and pasty. In a food processor, finely chop the bell peppers, onion, and garlic. Stir into the mashed beans. Mix the egg, chili powder, cumin, and chili sauce together in a small bowl and stir into the mashed beans. Fold in bread crumbs until the mixture is sticky and holds together. Divide it into four patties.

If grilling, place patties on the foil and grill for about 8 minutes on each side. If baking, place patties on the baking sheet and bake for about 10 minutes on each side
