SALMON BURGER with Tangy Slaw

Ingredients

  • 1 (l4.75) can of salmon
  • 3 green onions
  • 3 T red bell pepper
  • 1 T finely minced cilantro
  • 1 T fresh lime juice
  • 1/4 tsp cumin seed
  • 1 medium egg (do not use large)\
  • 2 = 3 T mayo
  • 1 1/4 C bread crumbs
  • 2 = 3 T canola oil
  • Foccacia or kaiser roll for serving
  • TANGY SLAW
  • 2 C angel hair coleslaw mix
  • 1/4 to 1/2 C mayo
  • 2 T sour cream
  • 2 tsp fresh lime juice
  • 2 T finely minced red or green onion
  • 1/2 tsp cumin seed
  • 3/4 tsp sugar
  • 1 tsp finely chopped cilantro
  • Salt and pepper to taste

Step 1

First make the slaw ==

combine all slaw ingredients, cover and refrigerate


Fdor the salmon burger, drain the salmon and discard any bones. You can discard the skin or use half of it. It is full of vitamins and healthy fats.

Make bread crumbs in food processor.

Flake salmon, then stir in onions (which have been chopped fine, using most of the green), red bell pepper, cilantro, lime juice, cumin seed, egg, mayo (how much is used depends on the bread crumbs).

Then formm into patties -- about 5

Fry patties 3 to 4 minutes and then flip over and fry for 3 or 4 more minutes or until light brown.
