  • 3/4 butter, softened
  • 1 egg
  • 1 box lemon cake mix (pudding prefered)
  • 1 cup yellow cornmeal
  • 2 Tbls shredded lemon peel or less plus 1 Tbl lemon juice
  • Coarse sugar or confectioners sugar to roll cookies in

Preparation

Step 1

Preheat oven to 375. In a large bowl beat butter and egg. Gradually beat in cake mix until combined. Stir in Cornmeal and lemon zest.
Roll into 1 inch balls. Roll in coarse sugar and place on cookie sheets.
Bake for 9-10 minutes. Let cool on sheet for 1 minute then transfer to wire rack.
